    A Fused Affair

    The cuisine at Eighth Bastion is a fusion play of a high order. It is an earnest improvisation on some old favourites, hand-picked from the ring of Indian Ocean spots that witnessed Dutch influence from the early 1600s. Eclectic as the cuisine is, it uses local ingredients, particularly the famed spices of Kerala, in a commitment to freshness and a genuinely flavorful dining experience.

    3 Must Try Culinary Experiences
    The colonial visitors to Fort Kochi brought many things to comfort them in their long trading spells away from their homeland. One such is the "Bruder", a bread that is a Dutch specialty, which you can try at the Eighth Bastion. It promises a voyage of discovery in itself. There is a small bakery in the bylanes of Fort Kochi that still makes the original recipe of the Dutch Bruder Bread, which you can also visit if you are a true bread head!

    Our kitchens are little R&D centers pulsing with creativity and a flair for the novel. Experimenting with distinctive flavours from the West and the East, our master chefs have transformed many renowned dishes into extraordinary avatars that carry the unmistakable signs of their origins despite coming together in a whole new form. Our Curry Pasta is one such example among many that took flight first in the imagination of our celebrity chef, David Rocco.

    Our chefs make a daily recommendation of what is "special'. It pays to heed their advice, little hints, as they are about the delights of the day that await your palette.
