The cuisine at Mahe de Malabar is a fusion of styles, influences and innovative plating.
Traditional Indian dishes have been given a modern twist, designed to surprise the palate.
Continental  specials have been reinvented with a leaning towards fresh local produce, often tinged with Indian spice. 

Breakfast too, offers a wide, hearty choices, with both Indian and western style a-la-carte options.

As with all CGH hotels, freshness is a watchword, and we take our seafood very, very seriously. The  Mahe de Malabar menu also features a selection of fine wines, both imported and local, and plenty of healthy juices, crisp salads and vegetarian options.


A Piquant Pairing

The beefsteak gets a tangy twist, with sharp notes of flavour being provided by our chef's special apple sauce, deepened with sweet wine.  

Mashed potatoes and an orange-citrus peel highlight complete the ensemble.

Fresh as the Dawn

With Pondicherry harbour merely footsteps away, you can be sure we take full advantage of that fact. Our chefs personally pick the day's serving from the incoming boats, modifying recipes and switching between spices to accommodate the available catch.
This sering of local fish marries a pan-seared masala  marinade with coriander, crunchy seasonal vegetables and tangy daal, tempered with fiery spices.
The menu is Indian fusion with plenty of choice including vegetarian. My favorite was the prawns and my wife loved the achari tikka. Great mock tails!
